  • 8 medium tomatoes, seeded, chopped
  • 1/3 cup chopped red onion
  • 2 Tbs. chopped fresh cilantro
  • 1 Tbs. fresh lime juice
  • 8 (8”) flour tortillas
  • 2 cups shredded pepper jack cheese, 8 oz.
  • 1 cup black beans, drained, rinsed

Heat oven to 350°F. In bowl, combine first 4 ingredients. Place 4 tortillas on work surface; sprinkle with cheese. Top with tomato mixture, beans and remaining tortillas. Transfer to baking sheets. Bake, flipping halfway through cooking time, until cheese is melted, 12 min.
