Warm & Cozy Baked Apples Recipe Is Filled With Festive Fall Flavor

Brown sugar in the stuffing makes 'em extra-irresistible

Once I feel that unmistakable chill in the air, I’m ready to start planning fun fall activities. That means visiting the pumpkin patch, taking hay rides or navigating a corn maze. But one of my favorites is going apple picking. I always come home with a big bushel. And this Baked Apples recipe is the perfect way to use them up. It fills the house with autumn aromas and puts everyone in a festive spirit.

For an adults-only kick, we plump up dried cranberries with a little triple sec. Prefer a non-alcoholic version? Simply sub in orange juice. To make the stuffing, whiz up the cranberries with rich brown sugar, walnuts, and butter. Some of the filling melts in with apple juice during cooking to create a sweet-tangy glaze. They turn out so yummy on their own, but a dollop of ice cream on the side would also be amazing. Give ’em a try then let us know what you think.

Ingredients

  • 6 Gala apples, cored
  • 1/2 cup dried cranberries
  • 1/2 cup triple sec
  • 1 cup walnut pieces
  • 2 Tbs. brown sugar
  • 2 Tbs. butter, cut into pieces
  • 1/2 tsp. grated orange zest

Heat oven to 350°F. Trim 3/4" from top and 1/4" from bottom of apples, reserving tops. Transfer to 13"x9" baking dish. In microwave-safe bowl, combine cranberries and triple sec; microwave 30 sec., or until hot. Let stand 15 min. Drain. In food processor, combine walnuts, brown sugar, butter, orange zest and cranberries; process until coarse paste forms with small bits remaining.

Spoon filling into center and on top of apples; place apple tops next to apples. Cover loosely with foil. Bake until tender, about 45 min.; place tops over filling.
