Although recipes around the Internet vary, we’re big fans of this luscious looking version that comes studded with spicy green chiles. A rich base of butter-basted pinto beans, chiles, and scallions is topped with a spicy layer of hot sauce and taco sauce, cooled only slightly by sour cream.

Then comes the part that really has us salivating: the cheese. Two types of grated cheese mingle in a generous layer over the top before the whole thing is baked to bubbling perfection. Stay with us. Now mix it all together. Yes, really. Don’t worry, it gets yet another cheese and scallion treatment over the top, but this light stir gets you those irresistible cheese pulls as you scoop a generous amount onto your chip.
Other versions use taco seasoning instead of taco sauce and amp up the cheese count from two varieties to three. The one seen below uses a packet of taco spices instead of the jarred sauce and skips the scallion treatment.
