These Sweetly Sticky Papaya Chicken Wings Are Summer on a Plate

Chicken is one of those meats that’s great for all occasions. Whether it’s when you have friends over for dinner or when you need something on the table on a busy weekday night, who doesn’t love tasty chicken wings?

This recipe incorporates deliciously fresh papaya, orange juice, and spicy chili to give you a really exotic flavor. On top of that, most of the cooking involves putting your feet up as the wings marinade, so it’s super easy. Even the kids can join in!


  • 4.41 lbs. chicken wings 
  • 2 tsp. olive oil
  • 1 cup pureed fresh papaya 
  • 1/4 cup packed brown sugar 
  • 1/2 cup fresh orange juice
  • 2 tsp. fresh lime juice
  • 1 tsp. fresh grated ginger
  • 1 tsp. chili powder or smoked paprika
  • 1 tsp. sea salt

To garnish

  • Fresh cilantro leaves
  • Fresh papaya
  • Lemon and lime wedges


  1. Cut chicken wings into wingettes and drumettes and discard tips (or buy wings which have already been split into sections). Combine all marinade ingredients in a large bowl and mix well. Add wing sections and toss to coat.
  2. Set wings aside for 30 minutes to marinate. Preheat oven to 400 degrees Fahrenheit. Line two rimmed oven trays with baking paper. Remove wings from bowl, reserving marinade, and arrange in a single layer — skin-side up — over the prepared trays.
  3. Bake 25 to 30 minutes, basting with the remaining marinade twice during cooking. The wings are done when they are sticky and golden, and when the meat separates easily when pulled.
  4. Serve with cilantro leaves, fresh papaya, and citrus wedges.
