These No-Bake Gluten-Free Pumpkin Pies Are the Sugar-Free Answer to Your Pumpkin Spice Cravings


These adorable single-serve no-bake pumpkin pies are both refined sugar-free and gluten-free for a healthy dessert option that’s both fun and festive. Our pies are naturally sweet with the perfect hint of pumpkin spice, so you can indulge your craving without feeling guilty. To make our no-bake pumpkin pies, follow the recipe below. 


  • 3/4 cup pecans
  • 9 fresh dates, pitted
  • 2 Tbsp. coconut oil, melted
  • 1/2 tsp. ground ginger

Pumpkin Filling

  • 28 oz. kabocha squash, peeled, chopped coarsely
  • 1/2 cup ricotta
  • 8 fresh dates, pitted
  • 2 tsp. vanilla extract
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cinnamon


  1. In a food processor, process 1/2 cup of the pecans, six of the dates, the oil, and ginger until finely chopped and sticky. Press pecan mixture into the base of six 3/4-cup glass jars and refrigerate until required. You can use the end of a rolling pin to press the base mixture into the jars.
  2. Steam pumpkin for 15 minutes or until soft; drain well. Cool slightly. Process pumpkin with remaining ingredients until smooth.
  3. Spoon filling into jars; cover, refrigerate for two hours or overnight. You can do this up to two days ahead of time.
  4. Coarsely chop remaining pecans and remaining dates; sprinkle mixture on pies before serving.
