Peanut-Butter Chocolate Cookies

First, mix butter, milk, sugar, and cocoa powder in a pot and stir until combined. Then move the pot to the stove and continue stirring over low heat until the butter is melted. Next, bring the mixture to a boil and continue stirring for one minute. Fold in peanut butter and vanilla extract and stir until combined, then follow with quick oats and stir until they are coated.

Drop a heaping teaspoon onto a parchment- or wax-paper lined baking sheet and let cool before serving.

Begin by mixing sugar, almond milk, and oil in a medium saucepan before bringing to a boil over low heat. After boiling for a minute remove from the heat and stir in vanilla, almond butter, coconut flour, sesame seeds, sunflower seeds, oats, and salt.

Drop a tablespoon of the mixture onto a lined baking sheet and let sit at room temperature for about 25 minutes until they are cool and firm. Can’t wait? Speed things up by popping in the fridge.

Take a tablespoon and scoop out the mixture onto a lined baking sheet. Let cool for about 30 minutes before eating.
