If you’re not familiar with the icebox cake, it’s about time you get friendly with this fantastically simple sweet. Although this one doesn’t involve any actual cake, several different sweet components come together to create a 7-layer dessert that your guests won’t be able to stop talking about. You’ll look like the second coming of Martha Stewart when you present this pan of sinfully silky dessert; no one will have any idea that it took you mere minutes to prepare. So what are the layers actually made of? The base is peanut butter sandwich cookies lightly soaked in milk; dunked for a couple of seconds, they take on the consistency of cake with a fraction of the work. You’ll also find generous layers of whipped topping and no-bake cheesecake hiding in the pan, laced with hefty dollops of peanut butter. We finished off the whole thing with chopped Reese’s peanut butter cups, crushed peanut butter cookies, and chocolate chips for a whisper of cocoa in the middle of this PB-fest.
