Golden, cheesy, and crispy, these flavorful cauliflower and bacon fritters are the perfect way to spice up snack time. Served as a starter or with a fresh, mixed salad as a main meal, you can’t go wrong! Aside from being tasty, cauliflower is a superfood. In fact, cauliflower is rumored to be one of the healthiest foods on earth! Cauliflower is not only calms inflammation, but it’s rich in vitamins and minerals, and has been proven to boost brain health, improve heart health, aid digestion and weight loss, fight cancer, and detoxify the body.
17 oz. cauliflower, cut into small florets
2 pieces of bacon, thinly sliced, chopped
1/4 cup grated parmesan
1/4 cup self-raising flour
1/4 cup packaged breadcrumbs
3 eggs, lightly beaten
1 garlic clove, crushed
1 Tbsp. chopped flat-leaf parsley
4 cups salad greens, to serve
Cook cauliflower in a saucepan of salted boiling water for three minutes or until tender. Drain. Set aside to cool.
Heat a small frying pan on high. Spray bacon with cooking oil. Cook two to three minutes or until lightly browned. Drain on paper towel.
Combine cauliflower, bacon, parmesan, flour, breadcrumbs, egg, garlic, and parsley in a bowl.
Heat enough oil to reach a depth of 1/4-inch in a large frying pan on medium. Cook 1/4 cups of cauliflower mixture in batches for two to three minutes on each side, or until golden and cooked through. Drain on paper towel. Serve with salad.
