- 6 chicken thigh fillets
- 3 cloves garlic
- 1 medium lemon
- 2 tablespoons coarsely chopped fresh flat-leaf parsley
- 1 tablespoon water
- Halve chicken fillets. Cook chicken in a large frying pan with oil.
- Meanwhile, crush garlic. Finely grate two teaspoons of rind from lemon. Squeeze two tablespoons of juice from lemon.
- Add garlic, rind, juice, parsley, and the water to pan. Turn chicken to coat and season to taste.
