Honey Citrus-Glazed Carrots

So why not go big and let a few unexpected seasonings help you let carrots be the tasty new star of the show?

This unique and flavorful new dish that uses carrots as the base will allow you to do just that. A few simple and kid-friendly yet healthy ingredients that you probably already have on hand — think honey, citrus, a little bit of chicken broth, and a splash of zesty orange juice — help make this easy carrot dish a mid-week crowd-pleaser. If you’re having trouble getting your kids to eat their vegetables, these sweet and tangy, anything-but-boring glazed carrots just may do the trick! Ingredients

  • 1 Tbsp. butter or margarine

  • 4 cups sliced carrots

  • 1/4 cup honey

  • 1/2 cup chicken broth

  • 1/2 cup orange juice

  • 1/2 tsp. minced orange zest

  • 1 tsp. salt

  • 1/4 tsp. pepper

Instructions

1. In large skillet, melt butter over medium-high heat. Add carrots and sauté for several minutes.

2. Add honey, broth, orange juice, and orange zest.

3. Reduce heat to medium-low and simmer until carrots are cooked and the liquid is thick.

4. Season with salt and pepper.
