The Key to Perfect Bacon

Here’s an easy way to hit that delicious sweet spot between bacon strips that are flabby/fatty and burnt/shriveled: Place the strips in a skillet and add just enough water to cover the bottom of the pan. Cook over medium-high heat until the water evaporates, then lower the heat to medium and cook until the strips are crisp. The simmering water plumps up the bacon and renders out the fat gently, so it’s less likely to burn. Bonus: You’ll get fewer splatters!
