Strawberry Shortcake Snakes
Made with satiating coconut oil, energizing Greek yogurt and mood-boosting berries, these too-cute charmers are sure to have the whole gang slithering in for more.
2 cups white whole-wheat flour
4 tsp.** baking powder **
1/2 tsp. *baking soda *
1/2 cup cold *coconut oil *
1/2 cup orange juice or milk
2 Tbs. *maple syrup *
2 cups *vanilla Greek yogurt *
3 Tbs. honey
4 cups sliced fresh strawberries
6 whole strawberries
12 mini green candies
Heat oven to 400°F. In bowl, mix first 3 ingredients and 3/4 tsp. salt. With pastry blender or 2 knives, cut coconut oil into flour mixture until small crumbs form. Add orange juice and maple syrup. Using fork, stir until soft dough forms.
Shape dough into 6″ x 8″ rectangle; cut in half lengthwise. Cut each half lengthwise into thirds to create 6 strips; roll each piece into 10″ log. Arrange logs on greased baking sheet in_ S_ shape to make snakes. Bake 10 to 12 min. or until done. Let cool; cut in half horizontally to split.
In bowl, combine yogurt and honey. Spread one-third of the yogurt mixture on bottom halves of snakes; top with half of the strawberry slices. Place top halves of snakes on strawberry slices. Spread or pipe remaining yogurt mixture on top of snakes; arrange remaining sliced strawberries on top.
Cut a slit in narrow end of whole strawberries. Remove 1 leaf from each strawberry; cut into forked tongue and insert into slits. Press green candies into strawberries for eyes. Arrange strawberry heads in front of snake bodies. Serve immediately.
