3 Quick and Easy Breakfasts You Can Prep the Night Before
Eating most of your calories before 3 pm is a surefire way to speed fat burning and power off pounds — and these portable breakfasts make it effortless, even when you don’t have time for meal prep in the morning.
Mini Frittatas
These grab-and-go delights can be made in advance — they’ll keep in the freezer for up to a month. Just toss them in the microwave to reheat.
To do: Beat 6 eggs with 1 ⁄3 cup of cream. Stir in any diced veggies. Bake in muffin pan at 350°F for 20 minutes. Makes 4 servings of 2 frittatas each.
Baked Oatmeal Squares
Store these oat squares in the fridge for quick meals all week. Reheat in the toaster.
To do: Combine 2 cups of rolled oats, 1 tsp. of baking powder, 1 egg, 1 1 ⁄2cups of milk, 1 mashed banana, and cinnamon to taste. Pour into a greased baking pan. Bake at 375°F for 40 minutes. Cut into squares. Makes 6 servings.
Overnight Chia Pudding
Toss this together in the evening, then grab and go the next morning — it’s perfect to eat at your desk.
To do: In a small jar, combine 1 cup of almond milk, 1⁄2tsp. of vanilla extract and 2 Tbs. of chia seeds. Refrigerate overnight. Top with berries or chopped nuts. Makes 1 serving.
