This Pickle de Gallo Recipe Produces a Homemade Salsa You Can Put on Any Dish: Ready in 10 Minutes

Add this briny pickle de gallo to burgers, eat it with tortilla chips or place it on top of soup

Pickle de gallo is the crunchy and briny salsa you’ll fall in love with because it can be whatever you want it to be. Want to use it as a topping? Sprinkle it onto tacos, burgers or hot dogs. Care to enjoy it solo? Serve it in a bowl with your crunchiest tortilla chips. And we can’t forget that honorable mention of spooning it onto a tangy chilled soup like gazpacho. The bottom line is, pickle de gallo is the ingredient blend that does a lot and is easy to make in 10 minutes. Here’s how to make a batch of this tasty spread to enjoy with your favorite meals!

The ingredients in pickle de gallo

Pickle de gallo typically contains chopped pickles and brine from the jar, onions, red bell peppers, garlic, lime juice and other ingredients. This creates a chunky mixture that resembles regular pico de gallo (a fresh salsa made with tomatoes), but the pickles give it a nice salty and acidic flavor kick. It’s an unexpected yet delicious way to use up this fridge staple, and there are plenty of ways to incorporate pickle de gallo into dishes.

What do you eat pickle de gallo with?

Keeping a batch of pickle de gallo in your fridge means you can dress up any meal in seconds! For lunch, use it as a crunchy condiment for sandwiches, tacos and wraps. It’s also a great snack option served in a bowl with tortilla chips or vegetable sticks. You can also place it on top of soup for a burst of freshness. Ultimately, this briny twist on traditional pico de gallo produces a toss-together savory mixture you’ll want to put on everything!

How to make pickle de gallo

This Pickle de Gallo recipe is from TikTok creator Ashley McCrary (@healthylittlepeach). You can use homemade pickles like these ones from our guide on how to pickle cucumbers in the fridge. Or, follow McCrary’s lead and use a store-bought variety like Grillo’s Dill Pickle Chips. Another way to add flavor is by substituting all or half of spicy or bread and butter pickles for the dill kind.

Once combined, enjoy the pickle de gallo right away or keep it chilled in the fridge until you’re ready to serve. (Be sure to also check out our story on using pickle juice for cooking and this recipe for Polish Pickle Soup.)
