Sometimes celebrities know a thing or two about making good food. So when I stumbled upon Meghan Markle’s three-ingredient pasta sauce, I couldn’t resist giving it a try. Slow-cooking zucchini sounded like a wild experiment, but the promise of a creamy, decadent sauce without a drop of butter or oil? Count me in. This vegetarian twist on bolognese takes just one hour in an Instant Pot, plus I’m sharing an easy pasta recipe to pair it with for any weeknight dinner. Here’s how to make Meghan Markle’s zucchini pasta sauce.

What is Meghan Markle’s zucchini pasta sauce?

In a 2018 interview with Delish, Markle described her zucchini concoction as “filthy, sexy mush.” The original recipe only used three ingredients: zucchini, water and bouillon cube for added flavor. A friend of the former Suits star convinced her to try slow-cooking the vegetable for four hours until it broke down. The result? A luscious yet healthy sauce to mix with pasta. “The sauce gets so creamy, you’d swear there’s tons of butter and oil in it, but it’s just zucchini, water and a little bouillon,” Markle said in the interview.

Since then, many people have taken to social media to document their attempts and share their reviews of the sauce. Most loved how rich and creamy it tasted despite not containing any dairy or meat. Watch this TikTok video of one fan’s positive experience:

3 tips for making Meghan Markle’s zucchini pasta sauce

Here are some helpful tips I used when making this pasta for the best results:

1. Check on your zucchini

While Markle’s recipe lets the zucchini simmer for four to five hours, mine took much less time. I recommend checking on it every half hour or so until it becomes mushy. It may be ready in as little as an hour, especially if you use an Instant Pot.

2. Don’t be afraid to add flavor

While the original sauce tastes good on its own, you can enhance the flavor with a few extra ingredients. I saw many recipes online adding onion and garlic to the pot before the zucchini. You can also swap out the bouillon for your stock of choice or add fresh herbs and other vegetables in your fridge.

3. Season at the end

Using bouillon cubes can add extra salt. So, if you don’t want an overly salty dish, save the shaker for after the zucchini absorbs the bouillon.

Easy zucchini bolognese pasta recipe

I loved this recreation of Markle’s recipe from Allrecipes. But the best part? Finishing with grated parmesan, basil and chili flakes for a kick.

Ingredients:

  • ¼ cup water
  • 1 low-sodium chicken bouillon cube
  • 3 medium zucchini, quartered then cut into ½-in. slices
  • 1 small onion, diced (optional)
  • 12 oz. cooked pasta of your choice, cooked
  • Freshly grated Parmesan cheese (optional)
  • Fresh basil (optional)
  • Red pepper flakes and/or black pepper (optional)

Directions:

  • Total Time: 1 hour, 20 minutes
  • Yield: 4 servings
  1. Add the water and bouillon cube to the Instant Pot along with the chopped zucchini and onion, if using. Seal with the lid and cook on manual mode for 1 hour.
  2. Allow the zucchini to break down for another 20 minutes. Use a slotted spoon to transfer the zucchini to a large bowl along with cooked pasta. Add extra cooking liquid as desired. Garnish with Parmesan, basil and pepper or red pepper flakes, and enjoy.

Note: If using a pot or slow cooker, expect a longer cooking time. A simmering pot will take about 90 minutes, while a slow cooker four to five hours.
