Matcha and Dark Chocolate Brownies by Sudachi

Ingredients

  • 4¼ oz dark chocolate (70 percent cacao), broken into pieces
  • ½ stick unsalted butter, cubed
  • ½ cup sugar
  • 4 tbsp light brown sugar
  • ¼ cup all-purpose flour
  • 2 tbsp matcha powder, plus extra for sprinkling
  • 2 eggs
  • ½ tsp vanilla extract
  • 1 pinch salt

Directions:

  • Yield: 12 servings
  1. Preheat oven to 350°F. Line square baking pan with parchment paper. (Note: The parchment should come over the edges of the pan for easy removal at the end.)
  2. Place dark chocolate and butter into microwavable bowl. Microwave 30 seconds and mix. Return bowl to  microwave and cook in 20-second intervals, mixing each time. Repeat until chocolate and butter are completely melted and combined.
  3. Remove from microwave. Whisk in both sugars until smooth. Cool 5 minutes.
  4. In separate bowl, add mix together flour, matcha powder and salt. Set aside.
  5. Once chocolate mixture is cool, add eggs one at a time and whisk between each addition.
  6. Add vanilla extract and whisk one more time.
  7. Sift dry ingredients into wet ingredients. Then, fold them in using a spatula.
  8. Once well incorporated, pour the mixture into the baking tin. It should be a thick batter.
  9. Bake about 23 to 25 minutes or until center comes out clean when a toothpick is inserted. (Note: If it’s underbaked, return to the oven and repeat the pierce test every 2 to 3 minutes until it’s done.)
  10. Remove from the oven and leave to cool for a few minutes before transferring it to a wire rack (keep it in the baking parchment to prevent breakage). Once cooled, cut into 12 pieces and dust them with 1 tsp matcha powder. Enjoy!

Ingredients:

Brownie batter:

  • 1½ tbsp matcha powder
  • ½ cup unsalted butter
  • ⅔ cup white chocolate
  • 2 eggs
  • ½ cup + 1 tbsp sugar
  • ¼ cup brown sugar
  • ½ tsp vanilla extract
  • ¾ cup all-purpose flour
  • ¼ tsp salt

Cheesecake batter:

  • 1 (8 oz) brick cream cheese
  • ¼ cup sugar
  • ½ tsp vanilla extract

Directions:

  • Yield: 12 servings

  1. Preheat oven to 325°F. Grease or line an 8-by-8-inch pan.
  2. Melt butter and white chocolate in bowl. Set aside to cool.
  3. Beat eggs, sugar and vanilla together, then add chocolate mixture. Mix well.
  4. Sift in dry ingredients and gently fold to combine using a spatula.
  5. In a separate mixing bowl, mix room-temperature cream cheese, sugar and vanilla.
  6. Pour half of brownie batter into an greased or lined pan.
  7. Pour in cheesecake batter, smoothing it out.
  8. Add remaining brownie batter on top, dolloping it.
  9. Swirl batter using a bamboo skewer or the tip of a knife.
  10. Bake 30 minutes or until center comes out clean when toothpick is inserted. Cool completely at room temperature before refrigerating covered at least 4 hours overnight.
  11. Once set, remove from baking pan and cut into 12 even bars. Serve and enjoy!
