Jamie Oliver’s Speedy Homemade Mayo Recipe Only Takes 15 Minutes

Making homemade mayo involves combining egg yolks with oil and lemon juice or vinegar until a light and fluffy mixture forms. Oliver’s recipe includes both lemon juice and white vinegar so it’s got a slightly sour kick than your average store bought mayo. Adding Dijon mustard gives this recipe a tangy flavor that’ll make you want to put this mayo in everything.

Jamie Oliver’s Homemade Mayo Recipe
Makes: 2 cups | Cooking time: 15 minutes | Calories: 117 per serving
Ingredients
- 2 free-range egg yolks
- 1 heaped teaspoon Dijon mustard
- 2 cups (500 ml) olive oil
- 1-2 tablespoons white wine vinegar
- 1/2 lemon
- Sea salt
Method
- Whisk the egg yolks in a bowl, then add the mustard and whisk together. Gradually add about one cup of olive oil, very slowly at first. Whisk continuously for around three to five minutes, or until thickened.
- Once you’ve added a cup of the oil, whisk in one tablespoon of vinegar — this will loosen the mixture slightly and give it a more pale color. Continue to gradually add the remaining oil, whisking continuously.
- Season with a pinch of salt, a squeeze of lemon juice, and a little more vinegar, if needed. Store in a sterilized jar in the fridge for up to one week.
