Full of zesty and smoky flavors, these short ribs will be a hit at your Labor Day gathering — especially when served with sides like juicy boiled corn and creamy potato salad!

Ingredients: 

  • 2 Tbs. light olive oil
  • 1 small yellow onion, diced
  • 5 garlic cloves, sliced
  • 2 jalapeños, sliced
  • 1 Tbs. salt
  • 1 Tbs. ancho powder
  • 1 Tbs. ground cumin
  • ½ cup chopped cilantro
  • 2 limes, zest and juice
  • 1 Mexican lager, chilled

Directions:

  • Yield: 4 servings
  1. Heat olive oil in skillet over medium-low heat. Once heated, add onion, garlic, jalapeños and salt. Sauté mixture, stirring occasionally 3 to 5 minutes until onions are transparent while avoiding browning. Stir in ancho and cumin and toast until fragrant. Remove from heat and add lime juice and lime zest. Transfer to mixing bowl, add beer and cilantro and allow marinade to cool in refrigerator about 30 minutes.
  2. Put beer marinade in large plastic bag with short ribs. Marinate in fridge 3 to 12 hours.
  3. Preheat grill to high heat. Remove short ribs from marinade, discarding excess marinade. Pat dry with paper towels and sear each side over high heat about 3 minutes per side. Transfer ribs to platter, loosely cover with foil and rest 5 minutes before serving.
