Each tortilla is then filled with eggs, smashed avocado and any other ingredients your taste buds fancy. Here’s how to make this morning sensation that’s packed with delicious flavors and appetite-satisfying protein! 

What are cottage cheese tacos?

Making these tacos starts with the tortillas. Cottage cheese, one egg white, salt, pepper and red pepper flakes are combined in a bowl; shaped into circles on a baking sheet; and baked until they’re golden brown and set. Once cooled, a variety of ingredients are placed inside of the tortillas and served. These tacos are part of the viral cottage cheese craze, where the dairy staple is being added to dishes for a tangy flavor kick and nutritional boost.

Cottage Cheese Tacos

Ingredients:

  • ¼ cup cottage cheese
  • 2 eggs + 1 egg white
  • ¼ tsp. red pepper flakes
  • ¼ tsp. pepper
  • ¼ tsp. salt
  • ½ avocado, sliced
  • Chili oil and chives for topping (optional)

Directions:

  • Yield: 1 serving
  1. Preheat oven to 400°F. Line baking sheet with parchment paper.
  2. In small bowl, mix cottage cheese, egg white, red pepper flakes, pepper and salt until fully combined. Spoon mixture onto the baking sheet to make 2 round tortillas. Bake 20 minutes. Once tortilla base is golden brown and no longer liquidy, remove from oven and allow to cool.
  3. While tortillas are cooling, cook 2 eggs to your liking and transfer to plate to cool slightly.
  4. To build tacos, layer sliced avocado, egg, chili oil and chives onto each tortilla. Enjoy!

Easy make ahead tip for cottage cheese tacos

To enjoy these tacos for days to come, simply make a big batch of the cottage cheese tortillas. Once baked and cooled, store the tortillas in an airtight container — separating each one between a sheet of wax paper. Consume the tortillas within three days. Gently warm them up by placing the tortillas, one at a time, in a skillet over medium low heat. Flip occasionally so both sides are evenly heated. When all of the tortillas are reheated, assemble your tacos and dig in!
