Cottage Cheese Taco Dip
Ingredients:
- 2¼ cups fat-free cottage cheese
- ½ cup zero percent Greek yogurt
- 1 oz taco seasoning
- ⅓ cup pickled jalapeños, chopped, plus extra to serve
- 4 tomatoes, diced
- 4 scallions, sliced
- 20 black olives, sliced
- ½ cup cheddar cheeseÂ
- Fresh chopped cilantro
- Tortilla chips, for serving
Directions:
- Place cottage cheese, Greek yogurt, half amount of pickled jalapeños and the Taco seasoning into a high-powered blender or food processor.
- Blend until smooth. (Note: You may need to use a spatula to push the dip down the blender a few times.)
- Transfer dip to a large bowl.
- Top with remaining jalapeños, tomatoes, scallions, black olives, cheddar cheese and cilantro. Serve with tortilla chips.

High-Protein Taco Dip
Ingredients:
- 1 16-oz tub cottage cheese
- 1 small shallot
- 2 tbsp taco seasoning
- ½ tbsp onion powder
- Salt and freshly cracked black pepper
- 1 tbsp olive or avocado oil
- ½ lb ground beef
- 1 to 2 tbsp cheddar shredded cheese, plus more
- Sliced jalapeños
- Optional toppings: guacamole, sour cream, pico de gallo
- Regular or low-carb tortilla chips (for serving)
Directions:
- Preheat oven to 400°F.
- In a small food processor, process cottage cheese with shallot, taco seasoning, onion powder and black pepper. Process really well until silky smooth. Set aside.
- Bring a pan to medium heat and drizzle in oil. Add ground beef, taco seasoning and a small pinch of salt. Mince it well while cooking all the way through, about 10 minutes.
- In large oven-safe dish or individual-sized dishes, layer ingredients in this order: 3 to 4 tbsp of the processed cottage cheese mixture, 1 to 2 tbsp shredded cheese, 3 to 4 tbsp of minced ground beef, sliced jalapeños and more cheese.
