How to prep citrus fruits for a salad

When prepping citrus for this dish, many recipes will call for peeling it and slicing the fruit into rounds. Doing so removes the pith (the white part that encases the flesh), which tends to be bitter.   1. Place your citrus fruit horizontally on a clean cutting board.
  2. Using a sharp knife, cut the ends off of the fruit.

Ingredients:

  • 3 citrus fruits of your choice (such as a ruby red grapefruit, orange and a clementine)
  • Pomegranate seeds
  • Chopped mint leaves
  • A drizzle of honey

Directions:

  • Yield: 2 to 3 servings
  1. Peel and slice fruit accordingly into circles. Arrange on a platter
  2. Sprinkle a handful of pomegranate over citrus slices. Add chopped mint on top.
  3. Drizzle honey over fruit and serve.

2. Creamy Citrus Salad by Lifeway Kefir

Ingredients:

Salad base:

  • 2 oranges
  • 2 grapefruit

Dressing:

  • 2 tbsp fresh-squeezed orange juice
  • 1 tbsp Dijon mustard
  • 1 tbsp honey, raw agave or pure maple syrup
  • 2 tbsp raw apple cider vinegar
  • 2 tbsp organic plain lowfat kefir
  • 2 tbsp extra virgin olive oil
  • ¼ tsp sea salt
  • ¼ tsp garlic powder (optional)
  • Optional: fresh mint leaves for garnish

Directions:

  • Yield: 2 servings
  1. Cut up 2 oranges and 2 grapefruits in circles, discarding the peels. Plate on 2 plates and set aside. 
  2. For dressing, mix everything together in a measuring cup or blender, then pour over the fruit.
  3. Chill plate in refrigerator 20 to 30 minutes before serving, add fresh mint as a garnish (if you wish) and enjoy!
