One half of the sandwich is filled with the cheese and fruit before it’s enclosed with another bread slice and toasted in a pan or griddle. Once the cheese is melted, the sandwich is dusted with powdered sugar and served. Fresh blueberries work best for this sandwich as they’re plump and naturally sweet. But, you can use frozen blueberries in a pinch — just be sure to avoid thawing them so the sandwich isn’t too liquidy.

Then, the cooked blueberries, cheese and bread are assembled into a sandwich as it cooks on the Blackstone griddle. Blueberry Grilled Cheese

Ingredients:

  • ½ cup fresh blueberries
  • 2 Tbs. sugar
  • ½ lemon, juiced 
  • 2 slices brioche bread 
  • 8 oz. brie cheese, rind removed and sliced 
  • Generous knob of unsalted butter
  • Powdered sugar (for serving)

Directions:

  • Yield: 1 serving
  1. Heat griddle to medium-low heat.
  2. Place blueberries onto the griddle and allow them to heat 20 to 30 seconds before sprinkling sugar and lemon juice over them. Cook until fruit is soften and syrup, around 3 to 5 minutes. Remove griddle and transfer to bowl. Set aside. 
  3. Melt 1 Tbs. butter on griddle and place brioche on surface. Toast on first side, around 2 to 3 minutes, before flipping.
  4. While underside is toasting, place slice of brie onto 1 slice of bread. Add a spoonful of blueberry mixture before laying another slice of brie onto sandwich. Complete by topping with other toasted bread slice, toasted side down, to form grilled cheese sandwich.
  5. Cover with lid or basting dome and cook until cheese is melted and gooey. Gently flip and repeat on other side, ensuring both sides are golden and cheese is fully melty.
  6. Serve grilled cheese on plate and dust powdered sugar on top. Enjoy!
