Bacon Pancakes Combine Two Breakfast Faves in One Tasty Bite — Easy 30-Minute Recipe

These sweet and salty dippers are made for dunking into a variety of sauces

Enjoying pancakes and bacon for breakfast doesn’t have to involve cooking them in separate skillets. You can combine the two to make a sweet and salty treat called bacon pancakes. Each pancake has a slice of bacon in the center, which creates a dipper-like shape. They’re not only perfect for dunking into maple syrup or other sauces, but they’re a breakfast finger food you can make in about 30 minutes. Here’s more on bacon pancakes and a simple recipe that’s sure to brighten up any morning!

What are bacon pancakes?

This treat consists of cooked bacon strips that are coated in pancake batter and pan-fried until golden brown. The bacon pancakes are then served plain or with a dipping sauce.

Why bacon and pancakes are a perfect combo

It might sound odd to combine these breakfast staples, but we promise it actually works! The salty and smoky complements the sweet and buttery pancake. You also get a nice texture contrast as the bacon is crispy, while the pancake is soft and fluffy. Ultimately, bacon and pancakes are a match made in flavor heaven — and easy to whip up on a whim.

3 tips for delicious bacon pancakes

To ensure the bacon slice is perfectly encased in the pancake, follow these three tips.

1. Opt for thick-cut bacon slices.

Bacon that’s too thin will crumble as you’re dipping each strip in the batter. Instead, try a thick-cut bacon like the Wright Brand’s Hickory Smoked Bacon as it won’t break apart during the cooking process. Plus, you’ll nail that eye-catching pancake dipper shape. Cook the bacon slices using your preferred method before draining and cooling them slightly. (Learn why this trick for cooking bacon in water works to produce crunchy strips.)

2. Leave a few lumps in the batter.

As you’re mixing the pancake batter, avoid stirring it too much. This will cause more gluten to develop in the mixture, which makes the pancake tough rather than tender. That’s why Jessica Randhawa, owner and head chef at The Forked Spoon, says to stir the batter until all of the ingredients are just combined. “The batter should still have some lumps,” she notes.

3. Gently dip the strips into the mixture.

Coating each bacon strip in the batter carefully helps it maintain its shape. Be sure to work one strip at a time, and use tongs to dip and transfer the bacon to the heated skillet.

How to make bacon pancakes

The recipe below is adapted from one shared by Randhawa. It uses a homemade pancake batter that contains buttermilk for fluffy and tangy results. For added flavor, incorporate a pinch of cinnamon or dash of maple syrup into the batter. So simple and yummy!

  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup buttermilk
  • 1 large egg

  • Melted butter or oil, for cooking
  • Dipping sauce

Directions:

  • Yield: 3 servings (2 bacon pancakes per serving)
  1. In large bowl, mix together flour, sugar, baking powder, baking soda and salt.
  2. In another bowl, whisk buttermilk, egg and melted butter until well combined.
  3. Pour wet ingredients into dry ingredients and stir until just combined; leaving some lumps in batter. Set aside.
  4. Heat skillet over medium heat and brush with evenly layer of oil or butter.
  5. Dip each bacon strip into batter, making sure both sides are fully coated. Cook a few at a time in skillet, around 3 to 5 minutes per side, until pancakes are fluffy and browned.
