Spritz season but make it cake season. 🧡 Recipe: 1 cup sugar ½ cup brown sugar ½ cup oil 1 stick melted butter 2 eggs ¾ cup sparkling wine 1 tsp vanilla 1 ½ cups flour ½ cups almond meal 1 tsp salt 1 tsp baking powder Zest from ½ orange Glaze: 2 cups powdered sugar 2 tablespoons butter 1 tsp orange zest Pinch salt 2-3 tablespoons aperol -set your oven to 350*and grease a 9 in round then whisk together the flour, almond, salt and baking powder in a bowl. Set aside. -whisk together the sugars, oil, melted butter then add the eggs and whisk well to combine. Add the sparkling wine, vanilla and orange zest and whisk well. -dump the dry ingredients onto the wet and mix just until combined and no lumps remain. Do not overmix. -pour the batter into the prepared pan and bake for 35-45 minutes or just until the middle is set and it is golden brown. Allow to cool for 10-15 minutes then remove from the pan and finish cooling on a wire rack. -Once fully cooled, you can prepare the icing by mixing all the ingredients in a bowl. Tips for making the best Aperol Spritz cake

1. Use fresh oranges

2. Infuse the cake with Aperol

  • 1½ cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 3 large eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • 3 Tbs. freshly grated orange zest
  • 3 Tbs. freshly juiced orange juice
  • 2 Tbs. vanilla extract
  • 1 cup plain Greek yogurt (or sour cream)
  • 1 cup powdered sugar
  • 1 Tbs. Aperol
  • 1 Tbs. Prosecco
  • ½ Tbs. orange juice

Directions:

  • Total Time: 2 hours
  • Yield: 16 servings
  1. Preheat the oven to 350°F. Spray a 9-inch square baking dish or bundt pan with nonstick baking spray.
  2. In a small bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a large bowl, whisk together the eggs and sugar until combined. Whisk in the oil, orange zest and juice until combined. Add in the vanilla, then the yogurt and stir until no lumps remain. Stir in the dry ingredients until smooth. Pour the batter in the baking dish.
  4. Bake for 40 to 45 minutes, or until a tester inserted in the center comes out clean. Meanwhile, combine the last four ingredients to make the glaze. Let the cake cool for 20 minutes or so, then drizzle the glaze over top. Let it cool completely before serving.

Storing instructions

Store the cake in an airtight container at room temperature for up to 2 days or refrigerate for up to a week. If refrigerating, let the cake come to room temperature before serving to fully enjoy its flavors.
