Ingredients:

  • ¼ cup crumbled blue cheese
  • 1 stick unsalted butter, softened
  • ½ to ¼ cup prepared horseradish or fresh ground horseradish
  • ¼ tsp. salt
  • ½ tsp. paprika
  • Crackers and sliced veggies, to serve

Directions:

  • Yield: 9 servings
  1. In bowl, mash butter until smooth and creamy. Add salt, paprika, horseradish and crumbled blue cheese. Mix again until fully combined.
  2. Transfer to smaller bowl and serve with crackers and sliced veggies.
  3. Note: Store the dip covered in the fridge and enjoy within 3 days.

Dijon Crusted Rack of Lamb

Ingredients:

  • 1 rack of lamb
  • ⅓ cup Dijon mustard
  • ⅓ cup prepared horseradish
  • Fresh ground pepper to taste

Directions:

Yield: 2 servings

  1. Trim fat off of lamb rack. Preheat oven to 400°F.
  2. Mix horseradish with Dijon mustard and coat lamb rack. Sprinkle cracked black pepper to taste.
  3. Place foil on bottom of sheet pan or roasting pan. Set rack of lamb on top of foil in pan.
  4. Cook rack 15 to 20 minutes or until desired doneness. Remove from oven and allow to rest at least 10 minutes.
  5. Carve and serve with your desired sides.
  6. Note: The measurements for this recipe can easily be doubled or tripled to accommodate more servings.

Horseradish Caramel Apples

Ingredients:

  • 4 apples (any variety excerpt for tart apples), washed and patted dry
  • Store-bought or homemade warm caramel sauce
  • Prepared horseradish or fresh ground horseradish

Directions:

  • Yield: 4 servings
  1. Place horseradish into paper towel and squeeze dry. Set aside.
  2. Make sure caramel sauce is in a bowl. Insert wooden candy apple stick into each apple. Carefully dip apples into caramel sauce and place on parchment-lined baking sheet.
  3. Allow caramel apples to set in fridge or freezer. Once set, top with drained horseradish. Enjoy!
  4. Note: Feel free to add a small amount of horseradish on top and add more if you want it hotter.
