Jamie Oliver’s Speedy Homemade Mayo Recipe Only Takes 15 Minutes

And if you’re a mayo fan, you might not realize how easy it is to make your own. We love this quick recipe from one of our favorite chefs, Jamie Oliver, who has actually dubbed it, “My beautiful mayo” so you can imagine how yummy it is!

Making homemade mayo involves combining egg yolks with oil and lemon juice or vinegar until a light and fluffy mixture forms. Oliver’s recipe includes both lemon juice and white vinegar so it’s got a slightly sour kick than your average store bought mayo. Adding Dijon mustard gives this recipe a tangy flavor that’ll make you want to put this mayo in everything.

Plus, these are ingredients you most likely have in your pantry so it’ll cost nothing to make it right now. Hopefully we’ve convinced you enough to try this recipe at home!

Jamie Oliver’s Homemade Mayo Recipe

Makes: 2 cups | Cooking time: 15 minutes | Calories: 117 per serving


  • 2 free-range egg yolks
  • 1 heaped teaspoon Dijon mustard 
  • 2 cups (500 ml) olive oil
  • 1-2 tablespoons white wine vinegar 
  • 1/2 lemon 
  • Sea salt


  1. Whisk the egg yolks in a bowl, then add the mustard and whisk together. Gradually add about one cup of olive oil, very slowly at first. Whisk continuously for around three to five minutes, or until thickened. 
  1. Once you’ve added a cup of the oil, whisk in one tablespoon of vinegar — this will loosen the mixture slightly and give it a more pale color. Continue to gradually add the remaining oil, whisking continuously. 
  1. Season with a pinch of salt, a squeeze of lemon juice, and a little more vinegar, if needed. Store in a sterilized jar in the fridge for up to one week.
