Line a small baking pan with parchment paper. Pour the cottage cheese mixture in and spread out evenly. -Bake on 350F for 40 minutes! -Use as bread and build a sandwich! Ingredients:
- 1 cup cottage cheese
- 2 eggs
- 1½ tsp. Italian seasoning
- ½ tsp. garlic powder
- ½ tsp. onion powder
- Desired fillings and condiments like sliced chicken, onions or mayonnaise
Directions:
- Yield: 2 servings (1 flatbread sliced in half)
- Preheat oven to 350°F. Line small baking sheet with parchment paper; set aside.
- Place cottage cheese, eggs, garlic powder and onion powder into blender or food processor and blend until smooth mixture forms. Pour mixture into parchment-lined baking sheet and spread into even layer. Sprinkle Italian seasoning on top.
- Bake 40 minutes or until mixture is golden brown and set.
- Remove from oven and cool completely on baking sheet. Slice in half lengthwise.
- If using to make sandwiches, place fillings and condiments on one end of each flatbread. Close sandwiches and enjoy!
My taste test
When making this recipe, I noticed that the flatbread puffed up midway through baking — but deflated once cooled. This piqued my interest on how the flatbread would taste and feel once served. I went the sandwich route by filling it with a sliced chicken cutlet, tzatziki, tomato, lettuce and hot sauce. I was surprised at how well the flatbread held all of the ingredients considering it didn’t contain gluten, which helps strengthen most breads. The bread’s tangy and pungent flavors complemented the savory sandwich fillings. Also, the crispy yet chewy texture of the flatbread made each bite more enjoyable. Since I didn’t use the other flatbread half, I placed it in a plastic bag in the freezer and plan on warming it up another day. This recipe’s simplicity and tasty flavor won me over — so I’ll be making more batches of flatbread for sandwiches as well as other hearty delights!
