Make This Protein-Packed Chocolate Pudding at Home — It’ll Become Your New Favorite Healthy Dessert

Given that I have a bit of a sweet tooth and am always looking for creative ways to add protein to my diet (there’s only so much chicken and fish a gal can eat!), I was immediately hooked when I was scrolling through TikTok one day and stumbled across a protein pudding recipe that looked absolutely delicious.

TikToker @healthywithalex first posted this simple tofu-based pudding last month that she said contains a whopping 14 grams of protein and only five ingredients. To start, Alex adds 400 grams of silken tofu (also sometimes called soft tofu), a splash of almond milk, a few drops of vanilla extract, and a pinch of salt to a blender. She then turns on the appliance and runs it until the mixture is ultra-smooth. Next, she melts 100 grams of chocolate (she used sugar-free dark chocolate chips!) and then adds it to her mixture and blends it until it’s smooth again.

After that, she pops her creation into smaller ramekins and refrigerates them until they fully set. You can also add on a few optional ingredients, such as a light dusting cocoa powder, at the end.

Of course, I had to try this one. Alex’s instructions couldn’t be simpler, and I ended up whipping everything together in only about five to seven minutes from start to finish. I’m actually a bigger fan of milk chocolate than dark chocolate and don’t mind a little sugar, so I made that small swap and otherwise kept all of the ingredients the same.

I left my pudding in the fridge for six hours before sampling it, and sure enough, it tasted exactly as I’d hoped: creamy, smooth, and chocolatey just like pudding. Not a single hint of tofu!

One small tip for those who’ve never melted chocolate in a microwave before: Make sure you do it in only 20-30 second stints, stirring in between each one for a smooth consistency. You don’t want to set off that smoke detector.

There’s no question that I’m going to make this treat again in the future, and when I do, I definitely want to add some fruits like strawberries and blueberries! Sounds delicious, right?
