Ingredients:

  • ½ cup chopped fresh cherries
  • 16 oz. (2 cups) cottage cheese
  • 2 Tbs. maple syrup (regular or zero-calorie)
  • 1 tsp. vanilla extract
  • 2 Tbs. dark chocolate chips, chopped
  • ¼ cup cherries in syrup (optional)
  • Extra fresh cherries and chocolate chips, for garnish

Directions:

  • Yield: 2 servings
  1. Place cottage, maple syrup, vanilla extract and maple syrup into high powdered blend. Blend until smooth and creamy. Pour mixture into airtight container.
  2. Fold chopped cherries and chocolate into cottage mixture. Add cherries in syrup (if desired) and fold again until well-combined. Place lid on top of container and freeze at least 4 hours.
  3. Scoop ice cream into individual bowls and garnish with more cherries and chocolate chips. Enjoy!
  4. Note: Keep remaining ice cream in the container and store in your freezer for up to a month.
