Why is cottage cheese good for you?

Cottage cheese has taken the culinary world by storm, especially in the world of desserts. Known for its high protein content and low-fat profile, it makes a nutritious addition that doesn’t compromise on flavor or texture. Cottage cheese also has several essential nutrients like calcium, vitamin B12 and riboflavin. When blended, it transforms into a smooth, creamy base, making it a healthy swap for traditional high-fat pudding ingredients like heavy cream, sugar or whole milk. Watch the TikTok below:

How to make cottage cheese chocolate pudding

When I made this for the first time, I wanted to ensure it had the same texture and flavor as a store-bought pudding cup. And thanks to these tips, my first attempt came out great.

1. Blend thoroughly

Use a high-powered blender or food processor to blend the cottage cheese until it’s completely smooth, avoiding any graininess

2. Use quality chocolate

I firmly believe good chocolate makes all the difference. So, opt for high-quality cacao or cocoa powder and dark chocolate to enhance the richness of the pudding.

3. Sweeten gradually

Taste as you go to achieve the desired level of sweetness without overpowering the chocolate flavor. You can also add natural sweeteners like honey or maple syrup instead of sugar.

4. Chill properly

Chill the pudding for two hours or more before serving. This allows the flavors to meld together and the texture to firm up, resulting in that desired creaminess.

I loved how this recipe from Rachlmansfield is gluten-free and also has 15 grams of protein per serving. Plus, it takes just 5 minutes to prep.

Ingredients:

  • 1 cup cottage cheese
  • 2 Tbs. maple syrup (or more)
  • 2 Tbs. cacao powder (or cocoa powder)
  • 1 ripe banana
  • 1 scoop chocolate protein powder, optional
  • Chocolate chips, melted, optional

Directions:

  • Total Time: 1-2 hours
  • Yield: 1-2 servings
  1. Add all ingredients to a blender and blend until smooth and creamy.
  2. Pour pudding into a bowl or container of choice, then add a layer of melted chocolate chips on top, if desired.
  3. Place in the fridge to set until thick and the chocolate layer hardens (this usually takes at least 1 hour).

Storage instructions

You can store your pudding in an airtight container in the fridge for up to five days. But it’s best not to freeze cottage cheese, as it can alter the texture. Remember also to stir your pudding each time before serving to restore the consistency.
