Ingredients:

  • 1 cup Krusteaz’s buttermilk pancake mix or any other mix containing egg whites
  • 1 scoop unflavored or vanilla protein powder
  • 1 cup milk
  • Butter or oil (for cooking the pancakes)
  • Your desired toppings

Directions:

  • Yield: 4 servings
  1. In bowl, whisk together pancake mix and protein powder. Pour in milk and continue whisking until just combined. (Note: Leave a few lumps in the batter as overmixing it will result in tough and chewy pancakes.)
  2. Heat skillet over medium heat. Add enough butter or oil to cover skillet surface. Place ⅓
    to ½ cup of batter into skillet. Cook around 2 to 3 minutes, until bubbles start to form. Flip and cook on second side another 2 to 3 minutes.
  3. Once pancake is fully browned on both sides, transfer to plate. Repeat process with remaining batter.
  4. Serve pancakes with desired toppings. Enjoy!
