Blending This Superfood Staple Into Homemade Salad Dressing Will Make it Extra Creamy and Tasty
I’m always looking for new tricks to make my salads more delicious. Most recently, I came across a recipe that recommended adding an avocado to homemade salad dressing for a smooth and velvety texture. I gave it a go and was surprised by the results!
I have to admit, I was a little skeptical at first. Avocados are such a solid food and tend to leave tiny chunks behind, even when mashed for dishes like toast or guacamole. However, I quickly remembered they’re also often blended into smoothies and act as a natural thickener. With that in mind, I finally decided to give homemade avocado salad dressing a try.
I used this simple recipe from the 30Seconds Food blog that only called for four ingredients. First, I blended one ripe avocado, 1/4 cup of apple cider vinegar, and two tablespoons of lime juice in a food processor until smooth. Next, I slowly poured in 3/4 cup of extra virgin olive oil while the machine was still going so that the oil was evenly incorporated into the mixture. Then I finished by seasoning the mixture with a little salt and pepper.
The dressing was ready to serve in less than five minutes! Take a look at my gorgeous green results:
I drizzled two spoonfuls over a bowl of salad with air fried croutons and dug in. The dressing had a zesty yet buttery flavor from the lime juice and avocado. The apple cider vinegar also gave it some extra zing while the olive oil kept things balanced with a full, slightly fruity taste. Altogether, it really brightened up my otherwise plain salad.
Plus, I loved how the avocado added a creaminess to the dressing, similar to a Caesar salad. It wasn’t super thick at all, just perfectly coated the leaves while still allowing them to stay crisp. Overall, this avocado dressing really took my lunch to the next level!
Another thing I love about whipping up salad dressings from scratch is controlling how much salt is added — and they usually end up even tastier than store bought varieties! I also know I can get a nice health-boost from ingredients like avocados, which are known to help our gut health, immune system, and lower chronic disease risk. It only took a few minutes to blend together, so I’ll definitely be making this dressing recipe again. (Psst: Bigger batches will keep in the fridge for a week.)
Now I’m excited to try other fridge and pantry staples to put a unique twist on my dressings, like giving vinaigrettes a sweet and tangy kick with barbecue sauce!
