This Blueberries and Cream Sheet Pan French Toast recipe comes from blogger Lauren McDuffie‘s newest cookbook, Homemade-ish. “This recipe creates perfectly cooked slices of French toast that need only soak in the simplest mixture of blueberry yogurt and eggs to achieve that fetching golden color,” she says. Once baked, the French toast is accompanied with fresh blueberries, turbinado sugar, a sweetened sour cream mixture and maple syrup. Sure, it’s a medley of toppings but it creates a mouthful of tasty flavors to satisfy your sweet tooth!

While this recipe is already worthy of making one of your breakfast go-to’s, you can customize it to your liking. If you’re not a fan of blueberries, use another flavored yogurt in the customize and your desired fruit for the garnish. Challah bread is a great substitute for brioche as it boasts a rich taste. Plus, a large baking dish works just as well as a sheet pan to create caramelized and fluffy baked French toast.

Blueberries and Cream Sheet Pan French Toast

Ingredients:

  • 2 Tbs. butter, melted
  • 3 eggs
  • 2 (5 oz.) containers blueberry yogurt (Greek or regular)
  • Zest of 1 lemon
  • 8 slices brioche bread (pre-sliced is typically available)
  • ½ cup sour cream
  • Juice of ½ lemon
  • Maple syrup
  • Serving suggestions: fresh blueberries, turbinado sugar (optional)

Directions:

  • Active: 15 mins
  • Total time: 45 mins
  • Yield: 8 servings 
  1. Brush or rub melted butter all over surface of large baking sheet.
  2. Crack eggs into large baking pan and add yogurt, lemon zest and ¼ cup water. Whisk vigorously until totally combined. Lay bread slices into yogurty custard, turning them over to fully coat both sides, and let them sit for a while.
  3. Adjust oven rack to middle position, and preheat to 375°F.
  4. In small bowl, stir together sour cream, lemon juice and a couple teaspoons of maple syrup to taste. Set aside.
  5. Place soak bread slices on buttered baking sheet. Bake until very golden brown on top, and cooked, 30 to 35 minutes.
  6. Top with fresh blueberries and sprinkle with turbinado sugar, if using. Serve with lemony maple cream and extra maple syrup on the side, if you like.
