These patriotic mousse cups are made with tofu and coconut to boost your mood, energy and immunity—but they’re so sweet and creamy, no one will ever suspect it!
2 (14–16 oz.) pkgs. medium-firm** tofu**
1 1/4 cups grated unsweetened coconut, divided
3 Tbs. coconut cream
9 Tbs. light agave nectar, divided
1/2 cup chopped fresh** strawberries**
Red gel food coloring
1/2 cup fresh** blueberries**
Blue gel food coloring
Divide tofu into 3 equal portions; pat dry. In blender, puree 1 tofu portion, 1/2 cup coconut, coconut cream and 3 Tbs. agave 2 min. or until smooth; set aside. In blender, puree second tofu portion, 3 Tbs. agave and strawberries 2 min. or until smooth, adding red food coloring as desired; set aside. In blender, puree blueberries, remaining agave and last tofu portion 2 min. or until smooth, adding blue food coloring as desired.
Spoon tofu mixtures into separate resealable plastic bags; close and snip corner. Pipe red, white, then blue mousses into eight 5 oz. clear cups, holding cups at an angle, to create striped appearance.
In plastic bag, toss 1/4 cup coconut with enough red food coloring to tint red; sprinkle over red mousse. In separate bag, toss 1/4 cup coconut with enough blue food coloring to tint blue; sprinkle over blue mousse. Sprinkle remaining plain coconut over white mousse. Chill 30 min.
