Even little ones who generally shun fruit will dig into this happy, healthy tropical scene
1 large pineapple
1 large carrot, peeled and trimmed
1** green pepper**
1 pint strawberries
2 kiwis, peeled and sliced
1 lime, zested and juiced
1 Tbs. honey
4 cups assorted fresh *tropical fruit, *like papaya, mango, kiwi, starfruit and/or cantaloupe
8 maraschino cherries
1/4 cup shredded coconut (optional)
Cut pineapple in half lengthwise, leaving half the leaves intact on each side. Remove flesh of pineapple halves, leaving 1/2"-thick shell. Place best looking half on platter; discard other half. Chop pineapple flesh and remove and discard core; set aside.
Insert one end of toothpick or small skewer into carrot bottom; insert other end into pineapple half near base to secure carrot and create tree trunk.
Cut off top of pepper. Cut triangles into bottom half of pepper to make palm leaves; remove and discard seeds. Invert pepper onto carrot, securing with toothpick if needed to create tree. Arranged strawberries and sliced kiwis around pineapple on platter.
In bowl, combine 1 Tbs. lime juice, 1 tsp. lime zest and honey. Add tropical fruit, cherries and chopped pineapple; toss to coat. Spoon fruit mixture into pineapple shell. Sprinkle with coconut.
