No baking is required for this light-as-air dessert, which is full of flavor from luscious layers of pumpkin, chocolate and vanilla
20 chocolate-sandwich cookies, processed into crumbs
1/2 cup chocolate chips, melted
2 pkgs. (.25 oz. each) plain gelatin
1 pkg. (3.1 oz.) dark-chocolate mousse mix
2 pkgs. (1 oz. each) sugar-free white-chocolate pudding mix
1 1/2 cups nonfat milk
1 pkg. (8 oz.) Neufchâtel cheese
1 pkg. (12 oz.) whipped topping
1/2 cup pumpkin puree
1 1/2 tsp. pumpkin pie spice
Mix cookies and chocolate; press into bottom of greased 9" springform pan. In 2 bowls, sprinkle each gelatin packet over 2 Tbs. cold water. Let sit 1 min. Microwave 15 sec. or until melted. Prepare mousse as package directs, adding 1 bowl of gelatin; spread in pan.
Mix pudding mixes and milk. With mixer, beat cheese 1 min. Beat in pudding. Beat in topping and remaining gelatin; spread 3 cups in pan. Add last 2 ingredients to remaining cheese mixture. Spread in pan. Chill 4 hrs.
