We’re not going to knock the luscious layers of classic lasagna. We love the pull of the cheese as you remove a slice from a full pan of the pasta dish, but some nights you just don’t have the time to stack the ingredients as you should. With this quick and easy alternative your lasagna might take on a different shape, but you’ll sacrifice none of that saucy flavor you love--and, yes, it will still have layers.
Instead of stacking all of the ingredients one by one in a dish, create lasagna rolls with each noodle in just seconds. Douse lasagna noodles cooked al dente with a dollop of your ricotta cheese mixture, sauce, and a layer of spinach leaves before rolling each up and placing them in your dish. Naturally, top each pasta roll with a slice of fresh mozzarella for that picture-worthy cheese pull when you dish it up for dinner. Even better: This makes portioning out your plate even easier; instead of cutting clunky squares, simply count rolls.
