Enjoy a refreshing dinner on the deck with these vibrant fillets, which have the perfect blend of sweet, sour, spicy and smoky
3 cups diced mango
1 cup diced cucumbers
1/4 cup chopped scallions
3 Tbs. chopped fresh cilantro
Pinch of cayenne pepper
2 *limes, *zested and juiced
*2 Tbs. extra virgin olive *oil
1/2 tsp. ground cumin
1/2 tsp. honey
1 clove garlic, chopped
6 salmon fillets (6 oz. each)
Heat grill. In bowl, toss together mango, cucumbers, scallions, cilantro, cayenne pepper, 2 Tbs. lime juice and 1 tsp. lime zest. Season with salt and pepper to taste.
In separate bowl, whisk together olive oil, ground cumin, honey, chopped garlic, 1 Tbs. lime juice and 1 tsp. lime zest. Season with sea salt and pepper to taste. Brush salmon on all sides with cumin-oil mixture.
Grill salmon 10 min. or until done, turning once. Let sit 5 min. before serving. Serve with mango salsa.
