If you’re heading to a Memorial Day party this weekend, this festive twist on a fruit pizza is sure to make everyone smile. And because it’s packed with antioxidants, it’s guilt-free, too!
Here’s the delicious recipe:
3⁄4 cup** salted butter**
3⁄4 cup** light brown sugar**
13⁄4 tsp. *vanilla extract, *divided
1 large egg
3 cups** gluten-free flour, **like Betty Crocker
2 tsp. baking powder
11⁄2 cups** plain low-fat Greek yogurt**
2 Tbs. honey, or to taste
1⁄4 tsp. orange zest
1 qt. *strawberries, *chopped
3 large *bananas, *sliced
2 cups blueberries
1) Heat oven to 350°F. In bowl, using electric mixer on medium speed, beat butter, brown sugar and vanilla 1 min. Add egg; beat 1 min. Reduce speed to low. Add flour and baking powder. Beat 2 min.
2) Shape dough into disk. On greased baking sheet, press or roll out dough to 12" diameter; trim edges. Bake 14 to 16 min. Let cool.
3) In bowl, combine Greek yogurt, honey and orange zest. Spread cookie with yogurt mixture. Arrange strawberries, bananas and blueberries in a flag pattern. Enjoy.
And if you’re taking it to a BBQ, try this: The gluten-free crust will absorb moisture as it sits. To keep it from getting soggy on the go, sprinkle with 3⁄4 cup semisweet chocolate chips 3 min. after baking. Let sit 2 min. Spread with spatula; let cool before proceeding with step 3 of the recipe.
