3/4 cup lime vinaigrette, like Kraft
1⁄4 cup sour cream
2 Tbs. minced *cilantro *
1 Tbs. minced *jalapeño peppers *
1 cup crumbled prepared *cornbread *
1 cup drained canned** black beans **
1 cup drained canned corn
11⁄3 cups shredded *Monterey Jack *
8 cups *baby arugula *
2 cups diced rotisserie or cooked chicken
In bowl, mix first 4 ingredients. Divide last 6 ingredients evenly among four 1⁄2 to 1 liter jars or containers, layering as desired. Top with vinaigrette mixture; close jars.
