Homemade vinaigrette is a delicious way to dress a fresh summer salad, but most recipes are heavy on the oil. Try preparing vinaigrettes this way to trim calories: Combine all the ingredients in a jar, but cut the amount of oil in half. Next, toss in an ice cube, seal the jar and shake vigorously for 1 minute or until the dressing comes together. Then, spoon out and discard the cube. The ice cools the oil and vinegar so they blend easier, but doesn’t melt enough to make the dressing watery. The result: thick, flavorful dressing with half the fat!
