Our single-serve casseroles layer up all the things we love about a slice of deep-dish pizza—the sauciness, cheesiness and chewy crust—plus the added benefit of an extra serving of veggies.
1 pkg. **(11 oz.) refrigerated thin-crust pizza dough**
*2 cups shredded mozzarella cheese, *divided
*1/3 cup grated Parmesan cheese, *divided
*½ lb. chicken sausage, *casings removed and crumbled
*1 red onion, *chopped
*1 zucchini, *grated
*1 bell pepper, *sliced
2 Tbs. olive oil
1¼ cups garden-style pasta sauce
12 slices turkey pepperoni
Heat oven to 375ºF. Unroll dough. Cut 6 discs to fit 1-cup ramekins; place in greased ramekins. Bake 10 min. Top with 1 cup shredded mozzarella.
Reroll dough. Cut twelve 13" x ¼" strips; sprinkle with 2 Tbs. Parmesan. Twist 2 strips together; repeat 5 times.
In pan, cook sausage until browned; remove. Add next 4 ingredients. Cook 3 min. Stir in sauce, sausage and remaining Parmesan.
Spoon mixture into ramekins; place dough around edges. Top with 1 cup mozzarella and pepperoni. Bake on lower rack 20 min.
