1⁄2 cup beef broth
1/2 cup dry red wine
1 cup prepared balsamic dressing
1 Tbs. chopped garlic
1 Tbs. Dijon mustard
1 Tbs. chopped fresh rosemary
2 Tbs. chopped fresh parsley
2 tsp. chopped fresh thyme
2 Tbs. olive oil
1 crown roast of lamb
1. Heat oven to 400°F. In saucepan over high heat, bring broth, wine, dressing and garlic to a boil. Reduce heat to medium; let simmer 10 min. or until reduced to 3⁄4 cup. Stir in next 4 ingredients; reserve 1⁄4 cup glaze.
2. Rub oil over lamb. Place lamb on rack set in roasting pan. Brush with remaining glaze.
3. Roast 30 min. or until inserted thermometer reads 145°F, brushing often with reserved glaze. Let sit 10 min. before slicing. Garnish with kumquats and currants, if desired.
