1/2 cup *mayonnaise *
1 Tbs. apple cider vinegar
2 tsp. Dijon mustard, like Grey Poupon
1/2 tsp. granulated** sugar **
4 cups coleslaw mix, like Dole
1/4 cup chopped *red onions *
1/2 cup prepared thousand island dressing, like Wish-Bone
1 baguette, sliced diagonally
3/4 lb. sliced pastrami
1 1/2 cups shredded Swiss cheese
Heat oven to 350°F. In large bowl, whisk together mayonnaise, vinegar, mustard and sugar until blended. Season with 1/2 tsp.salt,if desired. Add cole slaw mix and red onions; toss gently to coat.
Divide dressing evenly among baguette slices (about 2 Tbs. each); place on baking sheet. Divide cole- slaw mixture and pastrami evenly among baguette slices. Sprinkle evenly with Swiss cheese. Bake 5 min., or until cheese is melted. Garnish with bell pepper curls, if desired.
