_Salute our troops this Memorial Day with this 9-layer delight, inspired by Brit.Co. We added fruity gelatin to the layers to give it an All-American cherry-berry flavor, plus added some pretty patriotic pom-poms (instructions for homemade ones are below the recipe.) _
2 pkgs. (16.5 oz. each) white cake mix, like Duncan Hines
1 pkg. (3 oz.) cherry gelatin
1 1/2 tsp. red liquid food coloring
1 pkg. (3 oz.) berry-blue gelatin
1 1/2 tsp. blue liquid food coloring
3 pkgs. (16 oz. each) vanilla frosting, divided
1 pkg. (16 oz.) marshmallow cream, like Marshmallow Fluff
Heat oven to 350°F. Grease four 9" cake pans. Prepare cake mixes as package directs. Divide batter evenly among 9 bowls (about 1 cup each).
Working with cherry gelatin and red food coloring, stir 3 Tbs. plus 1/2 tsp. gelatin and 3/4 tsp. food coloring into one bowl. Stir 2 Tbs. plus 1/2 tsp. gelatin and 1/2 tsp. food coloring into second bowl. Stir 1 Tbs. plus 1/4 tsp. gelatin and 1/4 tsp. food coloring into third bowl. Stir 1 drop food coloring and any remaining red gelatin into fourth bowl. Adjust colors as desired with additional food coloring. Spoon red tinted batters into prepared pans.
Bake 10 min. or until done. Let cool 10 min. Unmold; let cool completely. Repeat process, working with berry-blue gelatin and blue food coloring to create 4 blue cake layers. In clean, greased cake pan, bake ninth bowl of white batter to create 1 white cake layer.
Reserve 1 1/2 cups vanilla frosting. Using mixer on medium, beat remaining frosting and marshmallow cream 1 min. or until smooth.
To assemble: On platter, layer 4 blue cakes fromdarkest to lightest followed by white cake and 4 red cakes from lightest to darkest, spreading each with 1/2 cup frosting mixture. Frost cake. Chill 1 hr. or until set. Spoon reserved vanilla frosting into pastry bag fitted with star tip; pipe decorative borders on cake. Garnish with decorative pom-poms, if desired.

Homemade patriotic pom-poms—made easy!
Fold a 3" x 15" piece of silver vellum paper in half twice lengthwise. Cut slits down the length every 1/8", leaving the top inch uncut; unfold. Using a 1" piece of double-sided tape, attach one uncut corner of the vellum to the end of a skewer. Wrap the paper around the skewer several times, until you reach the end. Secure with double-sided tape. Repeat with red and blue metallic vellum.
