2 tomatoes, sliced to 1/4" thickness
1 large zucchini, sliced to 1/4" thickness
1 large yellow squash, sliced to 1/4" thickness
1 red onion, peeled and sliced
1 red pepper, seeded and cut into quarters
1 Tbs. chopped fresh** thyme **
2 Tbs. toasted whole-wheat *bread crumbs *
2 Tbs. grated** Parmesan cheese**
1. Heat oven to 400°F. Arrange vegetables in single layer on baking sheet. Lightly coat vegetables with cooking spray; sprinkle with thyme.
2. Roast 20 min., turning once. Season with salt and pepper, if desired. Remove peppers; thinly slice.
3. Arrange vegetables on platter. Sprinkle with last 2 ingredients. Garnish with fresh basil, if desired.
