Even drinks like to be dressed up for Halloween, so we worked our magic and whipped up this clever beverage that combines pineapple gelatin and crushed pineapple with sparkling apple cider.
2 tsp. powdered egg whites
1 cup toasted coconut (optional)
1 pkg. **(3 oz.) pineapple gelatin**
2 cans (8 oz. each)** crushed pineapple in juice**
1 bottle (24.4 oz.)** sparkling apple cider**
2 Granny Smith apples
1 red apple
*6 mini marshmallows, *halved
12 mini candies or decorative sprinkles
*Step 1: *
Dissolve egg whites in water as instructed by package directions. Dip rim of 6 glasses in egg whites, then toasted coconut to coat; set aside.
*Step 2: *
In bowl, combine pineapple gelatin and 2 cups boiling water. Stir together 2 min.; pour into blender. Add crushed pineapple with juice; puree 1 min. Chill 1 hr.
Stir in apple cider just before serving. Pour mixture into prepared glasses.
For garnish (eyes), if desired: Cut 12 large wedges from Granny Smith apples; cut small wedge from center of each. Arrange large wedges on skewers with 12 small wedges cut from red apple and marshmallow halves topped with mini candies or decroative sprinkles.
