Potato chips are just about the most delicious snack there is (in our opinion, at least), but the trouble is, you can't stop at just a few. And eating more than a single-serving sized bag means adding a lot of calories and fat to your diet.
The solution? DIY potato chips that you microwave. It's not that tough to do. Slice a potato into 1/8-inch slices with a mandolin or a very sharp knife. Put the slices in cold water, rinse them, and then pat them dry.
Arrange the slices in a single layer on a microwave-safe plate (make sure none of the edges are touching) and season them with salt, pepper, or any spices or herbs you love; you can brush a little olive oil on them, too. Then microwave them on high for about six minutes.
You've now got yourself a delicious--and good-for-you--snack!
