Never burn that first flapjack again with this simple trick: Use a paper towel to apply a very thin layer of oil to your griddle instead of adding it directly to the pan. Letting a tablespoon of oil soak into the paper towel should be enough to coat the pan before you start cooking and between batches as needed. Greasing your pan this way ensures hot oil doesn’t pool in different areas around the griddle, causing uneven cooking on your morning short stack.
