Instead of adding high-fat gravy, our Test Kitchen director replaced the turkey fat, flour and cream with savory cranberry juice, apple cider and cranberries for a lean sauce that enhances flavor without the extra fat. With 390 calories and 20 grams of fat saved, this savory roast turkey will satisfy even the hungriest of Thanksgiving guests—without packing on pounds!
Here’s our healthy recipe:
5 Tbs. butter, at room temp. and divided
1 packet (14 g) concentrated chicken broth
1 Tbs. chopped fresh *parsley *
1 Tbs. minced *shallots *
1 Tbs. minced *garlic *
1 tsp. garlic powder
1 turkey (15 lbs.)
1 bag (12 oz.) frozen cranberries
1/2 cup maple syrup
3/4 cup** cranberry juice**
3/4 cup apple cider
1. Heat oven to 375°F. In bowl, mix 4 Tbs. butter and next 5 ingredients. Season with kosher salt and pepper; spread under and over turkey skin.
2. Place turkey on rack set in roasting pan; tie legs together. Roast 4 1/2 hrs. or until 175°F. Cover loosely with foil; let sit 10 min. before slicing.
3. In pan over medium-high heat, bring last 4 ingredients, 1 Tbs. butter, 1 tsp. salt and 1 tsp. pepper to a boil. Reduce heat. Let simmer 8 min. or until cranberries burst. Strain, if desired. Serve sauce with turkey.
